Bread Alone Managers are tasked with ensuring that their department is running, safely, smoothly, efficiently and in accordance with our Purpose, Values and Culture. Managers are the arbiters of good habits and culture on the floor. Mangers are the guides and support system for our supervisors, who are Bread Alone main source of leadership and guidance for Professionals. Bread Alone Managers spend majority of their time working alongside their team to train, anticipate challenges, problem solve, and innovate.
Whenever possible, Managers allow the Supervisor Team lead and build the Professional team's cohesion, practical skills, and techniques. Supervisors and Professionals are at the foundation of the Bread Alone team model, and Managers are responsible for Supervisor and Professional success.
Managers are responsible for actively troubleshooting and communicating with other Managers in all departments across the enterprise, and with the Manager on Duty (MOD) around issues that arise during the shift.
Managers must hold themselves and all teammates accountable to Bread Alone safety, culture, and employee conduct standards. They must address any product, equipment, and team issues in accordance with Bread Alone policy.
Managers take ownership and responsibility for their department. They embody the work ethic, curiosity, gritty determination, honesty, and humility that is at the core the Bread Alone management principles. Managers ask for consent, build consensus, and never use coercion to lead their team.

Hours:
This is a full time 5 day a week position and schedule includes working holidays & weekends. Working hours are Wednesday - Sunday between 4:00 pm and -12:30 pm. We strive to make schedules as manageable as possible to encourage and allow work/life balance.

Duties and Responsibilities:
Responsible for the safe, efficient, high quality operation of your department
Take ownership of ensuring that all products leaving your department meet Bread Alone standards and notify the department director of any obstacles.
Ensure that supervisors and professionals under your supervision are on schedule to complete their work correctly, in full, and in a timely manner
Actively communicate any work delays or product issues as soon as possible
Effectively communicate guidelines for safe and efficient operation of work stations
Ensure that all applicable safety, GMP, culture, and food safety standards are being followed by you and all team members
Communicate with managers in other departments around any observed issues relating to performance or compliance involving their teams
Have a full working knowledge of safe equipment operation, including calibration, routine maintenance and routine troubleshooting in your department
Properly document and report and maintenance issue outside of your your training or responsibility
Take necessary steps to mitigate any interpersonal issues that arise and seek support when needed
Responsible for scheduling of hourly staff, managing requests for time off, and call outs
Coordinate with the finance department to ensure accurate weekly payroll by maintaining staff punches, making necessary adjustments, and signing off on weekly hours for department
Collaborate with department director to proactively build your team and recruit any necessary resources to maintain adequate staffing levels
Consistently analyze training materials in your department to ensure that they reflect the most up to date work standards
Provide feedback to directors on areas of improvement within our protocols and guidelines
Support hiring decisions by facilitating trials, assessing candidate fit, and providing feedback to director
Support training and continued development of professionals through hands-on work and coordination with supervisors
Gain a working knowledge of all systems (physical, mechanical and technological) in use in your department and seek to continually expand your knowledge and comfort with those systems
Actively listen to team members, provide feedback to other managers and directors on any issues and seek support when necessary

Job Competencies:
Master all skills and procedures at all stations in production: mixing, make-up, shaping, and bake-off.
Master baking techniques and mathematical skills necessary to making recipe adjustments required by variable weather and ingredient conditions
Master the programming, operation, and troubleshooting of Rheon equipment, ensuring that all Bread Alone doughs can be processed and portioned to specification
Master the programming, operation, and troubleshooting of retarder/proofer system, ensuring that doughs are proofed to specification
Master the operation and troubleshooting of Heuft oven system, including creating and modifying baking programs
Master the operation, control, troubleshooting of the wood-fired oven including making and modifying baking procedures
Master appropriate use and upkeep of bread department small wares such as proofing carts, proofing baskets, baking trays, baking pans
Develop working knowledge of Bread Alone Production Book, ensuring that production reports can be printed as needed, and any discrepancies resolved
Monitor inventory for baking related supply and order or communicate any needs to the appropriate party
Train and mentor production staff on process, inventory, and habits necessary to ensure consistency in performance
Be organized and ensure that the team is organized by developing necessary working procedures and continually supporting implementation
Cooperate with management team to improve product quality through recipe, procedure, or equipment innovations on the production floor
Routinely perform quality inspections on all ingredients and supplies and be able to detect and troubleshoot any defect
Use creativity and curiosity to complete product testing and research and development
Lead and implement improvements and safety measures as agreed with the management team

Job Requirements:
Able to stand for long periods of time while executing tasks quickly and accurately
Able to work in a physically demanding fast-paced environment
Able to tolerate exposure to high levels of heat and cold
Able to twist and bend repeatedly for long periods of time
Able to pull, push, move and lift to waist level
Able to carry awkward and shifting weights up to 50 pounds in a safe and controlled manner
Able to work with, handle, operate, and control hot equipment and products in a safe manner according to Bread Alone guidelines
Willing to follow all Good Manufacturing Practices which includes but are not limited to: Removing any visible or exposed piercings and body jewelry, personal accessories, false nails & refraining from makeup at work (ie. mascara or heavy foundation, lipstick)
Respect for and comfort with a diverse and inclusive workplace
Able and willing to use personal protective equipment (PPE) and assigned uniform as required per company policy
Able to gain proficiency in operating and instructing on the proper use of all systems(physical and technological) in use in your department
Willing to follow all safety guidelines set out by Bread Alone
Willing to take responsibility for your own and others safety by strictly enforcing all safety rules and regulations and taking steps to mitigate any unsafe conditions or practices enlisting the help of others as needed
The Bakery is open 365 days a year and team members must be willing to work consistently throughout the year which includes holidays and weekends.

Compensation Details:
Bread Alone is committed to balancing the demands of the business and providing a living wage to all those who contribute to our success. Pay range for this position is $55,000 to $64,000 annually. -We are proud to offer an industry leading comprehensive benefits package for all employees that includes, but is not limited to, a quarterly bonus plan, health, dental, vision, 401k, PTO, and wellness time.
